1 measure sweet vermouth
2 dashes angostura bitters
1 measure soda water

Serve in a chilled coupette glass
Garnish: orange twist
How to make: Add all the ingredients to the shaker, and fill with cubed ice. Stir for 30 seconds, and strain into a chilled coupette glass, top with soda water.

Honeydew

1 measure gin
1/2 measure lemon juice
1/2 measure sugar syrup
2 drops absinthe or permod
5 cubes honeydew melon
Chilled prosecco to top
Serve in a coupette glass
Garnish: honeydew melon
How to make: Add all the ingredients to a blender, blend with 5 cubes of ice. Pour into a chilled coupette glass, top with prosecco.

2 measures lychee juice
3/4 measure lemon juice

Serve in a hurricane glass
Garnish: lemon
How to make: Add all the ingredients to a shaker and shake vigorously and double strain into a hurricane glass filled with cubed ice.

Hedgerow Collins

1 1/2 measure gin
1/2 measure creme de mure
1 tsp campari
3/4 measure lemon juice
1/2 measure sugar syrup
soda water to top

Serve in a highball glass
Garnish: lemon wedge and blackberry
How to make: add all the ingredients to the highball glass filled with cubed ice and stir gently, top with soda water.
